Moving to the classic harvest

The same trees, four weeks on. The fruit has darkened and softened; from the same weight we now get nearly twice the oil.
This oil will not be as sharp as the early harvest. The balance wanted for everyday cooking is here; the two exist for different jobs, neither is better than the other.
