Quality is decided in the grove
The quality of olive oil is decided in the grove, not in the bottle. In an early harvest the fruit is firmer and the yield lower. We get less oil, but the polyphenols stay high and that characteristic peppery finish holds.
Picking starts at sunrise and the fruit reaches our own mill the same day. Extraction is cold and the wait is short. Every hour between the fruit and the mill raises acidity.

Every batch is recorded separately
Which grove, which dates and which altitude it came from, together with the analysis result, is written on this site under its batch number; the same number is printed on the bottle's label. We copy the values by hand from the laboratory report; the report is published as it is.
We know what you know, and where the gaps are too. If a batch's report has not arrived yet, we say that as well.


Nobody in between
Zeynova is not a middleman. From the tree to your table in one pair of hands: the grove is ours, the mill is ours, the bottling is ours.
Origin details will come with their documents
We will write the grove's region, the year the trees were planted and how many generations have done this work once the documents are in hand. Until then you will find empty lines here, not guesses.
