The results for batch ZN-25-ME-01 came back from the laboratory: acidity 0.21, peroxide 6.4, polyphenols 486 mg/kg. The polyphenol figure is higher than we expected; early picking and altitude worked together.

We opened the season at the highest point. At 710 metres the morning is cool and the fruit tight; we worked with rakes rather than stripping by hand so the branches would not suffer.
